Macaroni au gratin with chorizo

Macaroni au gratin with chorizo is a classic in every Spanish home. The favorite dish of the little ones. Simple, but no less tasty.

INGREDIENTS:

  • Macaroni (300 g)
  • Chorizo in pieces (150 g)
  • Water (2.5 l)
  • Butter (100 g)
  • Fried tomato sauce (500 ml)
  • Mild olive oil (80ml)
  • Grated Parmesan or Emmenthal cheese (100 g)
  • Salt
  • Ground black pepper
  • Oregano

ELABORATION:

1. Place your Fagor pressure cooker on a heat source, pour in the water and bring to a boil at maximum power.

2. When it starts to boil, add the butter and season to taste.

3. Add the macaroni, stir well to prevent the pasta from sticking together and close the pot.

4. If your pressure cooker model allows it, select working pressure II and raise the intensity of the heat source to full power.

5. Once the working pressure is reached, reduce the intensity of the heat source to a minimum and leave it to cook for the time indicated, depending on the Fagor pressure cooker model used.

6. After the time has elapsed, release the pressure using the «2 Remove pressure by cooling the cooker with cold water» method described in the manual for your pressure cooker.

7. Cool the macaroni under a stream of cold water.

8. Place the cooker back on the heat source, add the olive oil and heat to medium power.

9. When the oil gets warm, add the chorizo and sauté for 2 or 3 minutes.

10. Add the fried tomato sauce, add the macaroni and flavour with the oregano. Let it cook for a few seconds.

11. Pour the macaroni and sauce into a baking dish, sprinkle with grated cheese and cook au gratin until golden.
