Ratatouille

The Ratatouille, is one of the star dishes of France prepared with stewed vegetables typical of Provence and Niza. Enjoying it at home in a short time is now a reality thanks to our pressure cooker.

INGREDIENTS:

  • Eggplant cubes (250 g)
  • Courgette cubes (400 g)
  • White onion, diced (200 g)
  • Red bell pepper in cubes (150 g)
  • Green bell pepper in cubes (150 g)
  • Ripe peeled diced tomatoes (400 g)
  • Finely chopped garlic cloves (2 und.)
  • Mild olive oil (60 ml.)
  • Vegetable broth (200 ml.)
  • Salt
  • Ground black pepper
  • Thyme
  • Laurel
  • Rosemary

ELABORATION:

1. Place your Fagor pressure cooker over the heat source and pour in the olive oil. Heat over medium heat until the oil starts to get hot.

2. Add the garlic and onion, and fry until the onion begins to turn transparent.

3. Add the red and green pepper, continue to stir-fry for another 5 or 6 minutes.

4. Add the eggplant and zucchini, sauté for a few minutes until golden and add the tomato.

5. Season the whole, flavour with the aromatic herbs and pour in the vegetable stock.

6. Close the pot, select the lowest working pressure your pressure cooker model allows and raise the heat source to full power.

7. Once the working pressure is reached, reduce the intensity of the heat source to a minimum and leave it to cook for the time indicated, depending on the Fagor pressure cooker model used.

8. After the time has elapsed, release the pressure using the method «1 Eliminate the pressure naturally» described in the manual for your pressure cooker.
