In this section we have tried to compile some of the most emblematic recipes from three currently leading gastronomies, without turning our backs on other cuisines that should have their due recognition. Mexican, Chilean, Italian, Japanese, etc. cuisine also has a place in our recipe book and in fact you can find representative recipes from these countries and some others in the «Recipes» chapter of our Fagor web site
TEACH, SHARE AND DISSEMINATE
Spain
Many years ago, in his book «La casa de Luculo», Julio Camba described Spanish cuisine in these terms; «Spanish cuisine is full of garlic and religious prejudices».
That was around 1929 and without wanting to contradict such an illustrious gourmet, there is no doubt that today’s Spanish cuisine is full of many more ingredients.
Our gastronomy currently enjoys a fair amount of worldwide fame, driven in large part by a generation of chefs who have chosen to open the doors of their kitchens, teaching, sharing and disseminating their knowledge with infinite generosity!
THE FUTURE IN THE PRESENT
Perú
Recognition has also come to Peruvian gastronomy. Today it is one of the most acclaimed and Peruvian restaurants are already colonizing many cities around the world.
Peru has such an overwhelming biodiversity that it fills its pantries with all kinds of ingredients, many of which are still unknown outside its borders.
It is important to know what is currently being cooked in this country in order to intuit the future of gastronomy in many others.

THE INFLUENTIAL MOTHER
France
Maybe it’s too exaggerated or chauvinistic to consider French cuisine as the mother of other kitchens that are close or even not so close. What is certain is that throughout history, when a country has wanted to refine its culinary tastes, it has always looked to France.
This approach did not always achieve the best results desired and many world cuisines did not receive their recognition until they looked within.
But now that is not a problem because in this section we are going to focus only on authentic French dishes.
